Vineyard
Selection of the finest terroirs of the Montagne de Reims, including :
• Premier Cru : Ludes, Chigny-les-Roses, Montbré, Taissy
• Grand Cru : Mailly-Champagne, Verzenay, Verzy
Blending
100% Pinot Noir.
Vinification
Selective hand harvesting, carried out at the peak of ripeness to achieve a complex and harmonious concentration of aromatic and phenolic compounds. After destemming, the grapes are gently transferred into tanks for several hours of maceration, allowing the colour to be naturally extracted from the whole berries in their own juice. Once the desired colour is reached, the tank is ‘bled,’ meaning only the juice is drawn off, without pressing the skins. The alcoholic fermentation takes place at a carefully controlled temperature (17°C-20°C), followed by the malolactic fermentation in thermoregulated stainless steel tanks. The secondary fermentation occurs in the bottle, in our cellars 15 meters underground, at a constant temperature of 11°C — ideal conditions for the development of fine, persistent bubbles.
The wines are aged for approximately 5 years in cellars and benefit from an additional resting period of several months after disgorgement.
Tasting Notes
Colour : A brilliant ruby hue, with fine and persistent bubbles.
Nose : Expressive and generous, offering a bouquet of macerated red fruits (raspberry, Morello cherry), complemented by delicate notes of blackcurrant and blackberry.
Palate : The taste is rich and rounded, with a vibrant, lively attack and fine bubbles. The red fruit flavours burst on the tongue, creating a delightful and indulgent sensation. The Pinot Noir imparts a refined tannic structure that perfectly balances freshness and intensity, while hints of plum and wild berries enhance the complexity of the aromatic profile.
